Totality Living Well – Christmas Confetti Pasta
Red Lentil Pasta
Cook according to directions on package and set aside.
1 Zucchini cut julienne style (3 inch spheres)
1 Yellow Pepper cut into strips
3/4 cup Baby Carrots sliced
¼ cup Kalamata Olives
1/3 cup Raisins
1 Large apple chopped
3 cloves Garlic chopped
1 ½ tsp Cumin
1 tsp Cinnamon
½ tsp Nutmeg
½ tsp Chili Powder
Salt to taste
1 TBS Unrefined Extra Virgin Coconut Oil
2 TBS Olive Oil
2 TBS Grated Parmesan Cheese (Optional)
Combine zucchini, orange pepper, baby carrots, olives, raisins, garlic and apple in large skillet with the coconut oil and spices and sauté until mixture is slightly tender. Add red lentil pasta and mix together over low heat with olive oil for 1 minute until everything is mixed and flavors are infused. Top with cheese if desired. Serve warm.
