This healthy dish is fun, different and loaded with flavor – not to mention so good for you!
Fruit is the wildcard in this recipe. When we think of taco dishes we generally think of spices and cheese. The strawberries add an elegant sweetness and a hearty dose of vitamin C. The sprouted grain tacos are low carb and gluten-free.
Monterey jack cheese, garlic powder and Italian seasonings merge nicely with the barbecue chicken thighs. Chicken thighs have a rich flavor, juicy texture and the B Vitamins. You can’t go wrong with this eclectic twist as you celebrate outdoors this holiday.
8 Ezekiel Tortillas
1 lb. Chicken Thighs
1/3 cup BBQ Sauce
1 cup shredded Monterey Jack Cheese
1 ½ cup sliced strawberries
2 Tbs. Italian seasoning
1 tsp garlic powder
A drizzle of honey per taco
Marinate chicken in a bowl for 15 minutes with BBQ sauce. Place over a grill until done. Cut chicken and set aside.
Place cheese in equal amounts onto tortillas and warm them in oven on warm until cheese melts. Add chicken and strawberries and place back in the oven for 2 minutes. Remove and sprinkle with garlic powder and Italian seasoning. Drizzle with honey and enjoy this powerfully tasty taco!!
